Mmm-mmmm tasty

So have you ever loved your roommate more than i love mine right now? I don't think you can, because she (Emily) made the MOST DELICIOUS CONFERENCE BREAKFAST EVER. Think you can top it? I think NOT!!! What she made is called an Apple Pancake, and can I just say, we ate almost the entire thing in one sitting, just going back for more as we listened to Saturday Morning Session of Conference. :) If you think i'm exaggerating, I'm, not you can see for yourself because here's the picture of the DELECTABLE treat we had.. oh I can't wait til she makes it again....


If you would like the recipe, here it is.. I'm pretty sure all you GF substitution whizzes out there could easily find a way to substitute the 1 T of flour in the recipe to make it GF so then you could partake in the utter heaven that this pancake is.. :D
Baked Apple Pancake
Serves 6

5 tablespoons butter, melted, divided
3 eggs, lightly beaten
3/4 cup milk
1 tablespoon granulated sugar
1/2 teaspoon vanilla extract
1/4 teaspoon ground cinnamon
1/4 teaspoon salt
1/2 cup plus 1 tablespoon flour
2 small apples, peeled, cored and thinly sliced
3 tablespoons brown sugar, lightly packed
3 tablespoons powdered sugar

1. Heat the oven to 450°. Combine 2 tablespoons of melted butter with the eggs, milk, granulated sugar, vanilla, cinnamon, salt and flour. Mix the batter by hand or in a food processor. Set aside.

2. Heat the remaining 3 tablespoons of butter with the apple slices in a 10-inch oven-proof skillet until the apples are sizzling and slightly cooked. Pour in the batter. Sprinkle the top with brown sugar and bake until well browned and puffed, 20 to 25 minutes.

3. Dust with powdered sugar. Cut into wedges and serve immediately.

  3. It looks delicious. So was that 1 T or a 1/2 Cup plus 1 T of flour? How do you put it together?

  4. ok i updated it with the instructions for the recipe :) and i didn't make it, my roommate did, so i can ask her stuff.. :)
